Roasted Beet Hummus
1 clove garlic, coarsely chopped
1/3 cup chopped roasted beets*
1 cup cooked white beans
2 Tbsp lemon juice
2 Tbsp extra-virgin olive oil
Coarse salt and freshly ground black pepper
Puree garlic, beets, beans, lemon juice, and olive oil in a blender or food processor. Season with salt and pepper. Serve with crudités and pita chips.
Preheat oven to 450 degrees. Peel beets and cut into ½-inch cubes. Toss with olive oil to coat, and salt and pepper to taste. Transfer to baking sheet.
Roast until tender, about 35 minutes, stirring once or twice.
*Beets are high in potassium, magnesium, fiber, phosphorus, iron, vitamins A,B & C, and beta-carotene, among other vitamins and minerals. They are also a wonderful tonic for the liver and work as a purifier for the blood. They can also prevent various forms of cancer.
